Put the pasta in a pot with boiling water, add 1 tablespoon of salt, olive oil and let it cook at medium heat for 10 minutes. Then drain the water.
Meanwhile, in a bowl mix with a fork 2 eggs, the cream, grated parmesan cheese, the squeeze of the lemon, the grated lemon zest with a pinch of salt and pepper to taste. Beat all the ingredients until you get an homogeneous mixture.
When the pasta are dry, pour them in a pot and mix them with the mixture. Add salt and black pepper if needed. Serve and sprinkle chopped parsley on top.
